Spinach Meat Loaf
Ingredients:
1 lb turkey or hamburger
2 egg
1 package of fresh or frozen spinach
1/2 teaspoon seasoning salt
1/2 teaspoon pepper
Directions:
Place turkey or hamburger in a mixing bowl.
If using fresh spinach, clean, drain water, and chop. If using frozen spinach, thaw out and drain excess water. Place spinach in mixing bowl with turkey or hamburger.
Add eggs
Add seasoning. If you require more seasoning for taste, you may do so.
Mix thoroughly and place in a square pan.
FRIED CABBAGE
Ingredients:
1 Cabbage
1 white onion
1 package of turkey or beef smoked sausage
1 green pepper
1/2 teaspoon seasoning salt
1/2 teaspoon pepper
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
2 tablespoons olive oil
Directions:
Place olive oil in deep large frying pan. Turn fire to medium. Ensure that your pan has a cover.
Slice sausage in small round portions and place in olive oil.
Cut up onion and green pepper. Place in pan with olive oil and sausage. Add all seasoning. Let all ingredients cook for 15 minutes. Turn ingredients in pan often, since olive oil will burn if not watched. Cook until onion and green pepper is soft and sausage has a light brown color.
Wash cabbage and cut up. Place in pan with the rest of ingredients and cover. Turn fire down to low. Cook until cabbage is soft, about 20 minutes. Ensure that you turn all ingredients in pan often to avoid burning.
Potatoes may be added.
Bake at 350º for 40 minutes uncovered.
You may serve with mashed potatoes. Your vegetable requirement is already in the meat loaf. Enjoy!
Italian Sausage, Peppers, Onions, and Pasta
Ingredients
6 (4 ounce) links sweet Italian sausage (doesn’t have
to be sweet if you don’t want
to use that)
½ yellow pepper
½ red pepper
1 whole green pepper
½ large red onion
½ yellow onion
¼ cup of white wine (Chardonnay)
1 teaspoon dried basil
1 teaspoon Italian seasoning
1 teaspoon seasoning salt
1 teaspoon pepper
2 cloves garlic (can substitute garlic powder)
1 (26 ounce) jar of Mezzetta’s Tomato Basil Pasta Sauce (any tomato basil
jar
pasta sauce will due)
1 diced seasoned tomatoes
Olive oil
Penne Pasta
Add olive oil and salt to boiling water. Then add Penne pasta, cook, then drain and set aside. A dash of olive oil can be added to pasta while dried to keep it from sticking together.
Slice sausage diagonally and brown in 12-inch nonstick skillet with olive oil over medium-high heat for about five minutes. Add Italian seasoning to sausage while browning. Remove sausage from skillet and set aside.
Using the remaining olive oil from the sausage, sauté yellow onions, red onions, garlic (if fresh garlic) and yellow pepper for 2 to 3 minutes. Then mix in red pepper and green pepper, season with basil and sauté for another 2 to 3 minutes. Stir in white wine. Continue to cook and stir until peppers and onions are tender.
Stir in Pasta Sauce, diced tomatoes and bring to a boil. Return sausage to skillet. Reduce heat to low and simmer covered for 10 minutes or until sausage is done.
Add Penne pasta and cook for another 5 minutes. Serve while hot and add fresh grated mozzarella cheese and garlic bread.

| Zucchini Pound Cake (Great for the
holidays) Ingredients: 2 cups self-rising flower (shifed) 2 cups sugar 1 cup oil (I like to use Wesson) 2 cups coarsely graded zucchini (normally 1 1/2 zucchini if they are large ones) 3 eggs 1 cup nuts (I normally use peacons) 1 cup raison or dry cranberry (I like to use raisons) 3 tablespoons cinnaman 1 tablespoon vanilla extract Directions: Beat egg, sugar, oil, vanilla extract together Add flour gradually together until all ingredients are blended Add zucchini, nuts and raisins Beat all for 3 minutes until all is blended together Bake at 350 degrees for 1 hour or until done. |
